zucchini roll-ups and what can happen when you get carried away

As I wrote in an earlier post and as all of you, who grow zucchini know: a zucchini never comes alone, but usually brings lots family and friends. Therefor one can't have too many zucchini recipes.

I came across a blog called The Fitchen - beautiful blog by the way with the slogan: 'sometimes raw, usually vegan, always organic.' - featuring a recipe for  zucchini-pesto-roll-ups So I thought I'll give that a try. Look what happened...

This is what it was supposed to look like, if I had stuck to the recipe:


















And this is what it ended up looking like, as creativity got a hold of me there...

What can I say? Truly I tend to stick to recipes, but this time... However it didn't look as elegant, but was delicious and I am sure the original roll-ups would be delicious too. Guess I will give them a second try and see if I can stay a little more focused.

For now, this is what I did:
* cut the zucchini in thin slices and fry
* prepare a filling out of avocado, basil, roasted pumpkin seeds, lemon, salt, pepper, red pepper, olive oil
* place half a cherry tomato in the center and roll up

That's pretty much it. Yummy!
